The Japanese are nothing if not meticulous when it comes to their rating system so when cattle receive the A5 designation, it means that it is the tip of the top of Wagyu. The result is a beautiful buttery bovine bonanza of flavor. :)
Over the years the Wagyu lineage has been bred for a unique marbling and a distinctive, smooth, buttery, flavorful fat. This isn't hyperbole. Wagyu is not just "a little different from other cattle." The composition of Fullblood Wagyu is totally unique. There is much more monounsaturated fat in Japanese Wagyu Tallow to the point where it gives duck fat and pork lard a run for their money. This extra monounsaturated fat, often thought of as the healthiest of all the fatty acids (although we tend to be partial to ALL those wonderful fatty acids) is what gives Wagyu fat that smooth mouthfeel and adds so much richness to your meals.
As a side note, if you are used to our other tallows, the Japanese A5 Wagyu Beef Tallow will arrive a bit soft or even liquidy. Just put it in the fridge to harden up.

- Thaw from frozen overnight in the refrigerator (approx 8 hrs)
- Once thawed, press firmly to squeeze out excess water & pat dry
- Our Tuna* Sashimi is designed to be eaten chilled or at room temperature. [Do not cook]
- Slice, dice or marinate to flavor according to recipe instructions
- Please keep frozen until ready to consume; once thawed, consume within 2 days
